Ingredients

1 cup cooked quinoa, cooled

1/2 cup almond butter (or any nut butter)

1/3 cup honey or maple syrup

1/2 cup dark chocolate chips (dairy-free, if vegan)

1/4 cup unsweetened cocoa powder

1/2 cup crispy rice cereal

1/2 teaspoon vanilla extract

1/4 teaspoon sea salt

Optional: Chopped nuts or dried fruit for added texture

Instructions

Prepare the Pan: Line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal.

Mix the Base: In a large mixing bowl, combine the almond butter, honey (or maple syrup), cocoa powder, vanilla extract, and sea salt. Stir until smooth.

Add Quinoa: Gently fold in the cooked quinoa, ensuring it is evenly coated with the chocolate mixture.

Incorporate Crunch: Add in the crispy rice cereal and dark chocolate chips. If using, mix in chopped nuts or dried fruit at this stage for added crunch and flavor.

Combine Thoroughly: Mix everything together until all ingredients are well combined. The mixture should be sticky but easy to handle.

Press into the Dish: Pour the mixture into the prepared baking dish, pressing it down firmly with a spatula or your hands to create an even layer.

Refrigerate: Place the dish in the refrigerator for at least 1-2 hours, until the bars are firm and set.

Cut into Bars: Once set, lift the mixture out of the dish using the parchment paper, and cut into bars of your desired size.

Store: Store the bars in an airtight container in the fridge for up to a week, or freeze for longer storage.
