Ingredients

3 large eggs, room temperature

1 cup granulated sugar

1 teaspoon vanilla extract

1/2 cup all-purpose flour

1/4 teaspoon salt

1/4 cup raspberry jam (plus more for filling)

1/2 cup heavy whipping cream

2 tablespoons powdered sugar

Fresh raspberries for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a 15x10-inch jelly roll pan with parchment paper and lightly grease it.

Make the Cake Batter: In a large mixing bowl, beat the eggs with an electric mixer on high speed until foamy. Gradually add granulated sugar and continue beating until the mixture is thick and pale, about 5 minutes. Stir in the vanilla extract.

Combine Dry Ingredients: In a separate bowl, whisk together the flour and salt. Gently fold the dry ingredients into the egg mixture, taking care not to deflate the batter.

Bake: Pour the cake batter into the prepared pan and spread it evenly. Bake for 12-15 minutes, or until the cake is lightly golden and springs back when touched.

Roll the Cake: Once baked, immediately turn the cake out onto a clean kitchen towel dusted with powdered sugar. Remove the parchment paper and roll the cake up in the towel from one short side to the other. Allow it to cool completely on a wire rack, seam side down.

Prepare the Filling: While the cake is cooling, fold the heavy whipping cream and powdered sugar together in a medium bowl until soft peaks form.

Assemble the Cake Roll: Once the cake is cool, carefully unroll it. Spread a thin layer of raspberry jam evenly over the cake, followed by the whipped cream mixture. Optionally, you can sprinkle fresh raspberries over the whipped cream.

Re-Roll the Cake: Starting from one end, gently re-roll the cake without the towel. Place seam side down on a serving platter.

Decorate: Dust the top with powdered sugar and drizzle with extra raspberry jam. Garnish with fresh raspberries if desired.

Slice and Serve: Slice into rounds to serve, and enjoy your Easy Raspberry Cake Roll!
