8 oz fusilli pasta (or any pasta of your choice)

1 cup butternut squash, diced

1 cup Brussels sprouts, trimmed and halved

1 cup red onion, thinly sliced

1 cup kale, chopped

1/2 cup dried cranberries

1/2 cup walnuts, chopped

1/4 cup feta cheese, crumbled (optional)

2 tablespoons olive oil

Salt and pepper to taste

For the Maple Dijon Dressing:

3 tablespoons pure maple syrup

2 tablespoons Dijon mustard

1 tablespoon apple cider vinegar

1/4 cup extra virgin olive oil

Salt and pepper to taste

Preheat the oven: Preheat your oven to 400°F (200°C).

    Roast the vegetables: On a large baking sheet, toss the diced butternut squash, Brussels sprouts, and red onion with 2 tablespoons of olive oil, salt, and pepper. Spread them out in a single layer and roast for 20-25 minutes, or until tender and slightly caramelized. Remove from the oven and let cool.

      Cook the pasta: While the vegetables are roasting, bring a large pot of salted water to a boil. Add the fusilli pasta and cook according to package instructions until al dente. Drain and rinse the pasta under cold water to stop the cooking process. Set aside.
