Ingredients

2 cups fresh corn kernels (or 1 can of sweet corn, drained)

1 cup heavy cream

1/2 cup honey

2 large eggs

1 cup cornmeal

1 tsp baking powder

1 tsp salt

1/2 tsp black pepper

1/2 tsp paprika

1 cup shredded cheddar cheese

1/4 cup chopped fresh chives (for garnish)

Instructions

Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.

In a large mixing bowl, whisk together the heavy cream, honey, and eggs until smooth.

In another bowl, combine the cornmeal, baking powder, salt, black pepper, and paprika.

Gradually add the dry mixture into the wet mixture, stirring until just combined.

Fold in the corn kernels and half of the shredded cheddar cheese into the batter.

Pour the mixture into the prepared baking dish, spreading it evenly.

Sprinkle the remaining cheddar cheese on top of the casserole.

Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

Let it cool for about 5-10 minutes before serving.

Garnish with fresh chopped chives before serving for an added burst of flavor.
