1 cup all-purpose flour

2 tablespoons sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup buttermilk

1 large egg

2 tablespoons unsalted butter, melted

1 teaspoon vanilla extract

1 tablespoon cinnamon (for dusting)

1/4 cup sugar (for dusting)

Chocolate sauce or dulce de leche (for serving)

Whipped cream (optional)

Instructions
 

In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

    In another bowl, combine the buttermilk, egg, melted butter, and vanilla extract. Mix until smooth.

      Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are okay.

        Preheat a non-stick skillet or griddle over medium heat and grease lightly with butter or cooking spray.

          Pour 1/4 cup of the pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes.

            Flip the pancakes and cook for an additional 2-3 minutes until golden brown and cooked through. Remove from the skillet and keep warm.

              In a small bowl, combine the sugar and cinnamon. While the pancakes are still warm, dust each pancake generously with the cinnamon-sugar mixture.

                Serve the churro pancakes hot, drizzled with chocolate sauce or dulce de leche, and topped with whipped cream if desired.
