1 pre-made pie crust (store-bought or homemade)

1 cup butternut squash, peeled and diced

1 cup Brussels sprouts, trimmed and halved

1 cup kale, chopped

1 small onion, diced

2 cloves garlic, minced

4 large eggs

1 cup whole milk

1 cup shredded Gruyère cheese

1 teaspoon dried thyme

1 teaspoon salt

½ teaspoon black pepper

Olive oil (for sautéing)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a skillet, heat a tablespoon of olive oil over medium heat. Add the diced onion and minced garlic, sautéing until fragrant and translucent, about 3-4 minutes.

      Add the butternut squash and Brussels sprouts to the skillet. Cook for about 5-7 minutes or until they start to soften. Add the kale and cook for an additional 2-3 minutes until wilted. Season with thyme, salt, and pepper. Remove from heat and let cool slightly.

        In a mixing bowl, whisk together the eggs and milk until well combined. Stir in the shredded Gruyère cheese.

          Place the sautéed vegetable mixture into the pie crust, spreading it evenly. Pour the egg and cheese mixture over the vegetables, ensuring everything is evenly coated.

            Bake in the preheated oven for 35-40 minutes, or until the quiche is set and the top is slightly golden. A knife inserted in the center should come out clean.

              Remove from the oven and let it cool for about 10 minutes before slicing. Serve warm or at room temperature.
