1 pre-made whole wheat pie crust

1 cup broccoli florets, chopped

1 cup Brussels sprouts, thinly sliced

1 medium sweet potato, peeled and diced

1 cup spinach, chopped

1 small onion, diced

3 cloves garlic, minced

4 large eggs

1 cup milk (or dairy-free alternative)

1 cup shredded cheese (cheddar or Gruyère recommended)

1 teaspoon dried thyme

Salt and pepper to taste

Olive oil for sautéing

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Sweet Potato: In a medium pot, bring salted water to a boil. Add the diced sweet potato and cook until tender, about 7-10 minutes. Drain and set aside.

      Sauté the Vegetables: In a large skillet, heat a tablespoon of olive oil over medium heat. Add the diced onion and garlic, and sauté until translucent, about 3-4 minutes.

        Add the Crunchy Veggies: Add the broccoli and Brussels sprouts to the skillet, and cook for another 5-7 minutes until they are softened. Stir in the chopped spinach and the cooked sweet potato, cooking just until the spinach wilts. Season the mixture with thyme, salt, and pepper, and remove from heat.

          Prepare the Egg Mixture: In a large bowl, whisk together the eggs and milk until well combined. Stir in the shredded cheese.

            Assemble the Quiche: Place the pie crust in a 9-inch pie dish. Spoon the sautéed vegetable mixture into the crust, spreading it evenly. Pour the egg and cheese mixture over the top, ensuring that it covers the vegetables evenly.

              Bake the Quiche: Bake in the preheated oven for 35-40 minutes, or until the quiche is set in the center and lightly golden on top.

                Cool and Serve: Remove from the oven and let it cool for about 10 minutes before slicing. Serve warm or at room temperature.
